Vegan Haute Cuisine: Launching a New Era for Stunning Veggie Gourmet Dining (Cookies Cream)
Cookies Cream, the popular restaurant in Mitte, has undergone a culinary transformation under the guidance of its new head chef, Nicholas Hahn. Taking over from Stephan Hentschel, who served at the establishment for 15 years, Hahn brings a fresh perspective to the table.
Hahn's philosophy is centered around creating reduced, tasteful, and visually striking dishes that cater to everyone, regardless of dietary restrictions. His new menu, which has been in place since summer 2021, is an avant-garde fusion of various global cuisines.
One of the standout dishes on the menu is the potato ceviche. This unique take on the classic dish features a crisp, raw texture, thanks to a blanching and rice wine vinegar pickling process. Served with a Peruvian-style leche de tigre sauce, the dish adds tanginess and spice, offering a flavor profile that emphasises the potato's essence.
The restaurant's industrial Berlin-club-but-with-tablecloths vibe remains funky and fresh, while the service is among the warmest in town. Cookies Cream sources produce locally when possible, but is flexible about it, ensuring the freshest ingredients for their dishes.
In addition to the potato ceviche, Hahn's signature dish at Cookies Cream is a love letter to red peppers. The dish consists of a meaty, tartare-like base, roasted pepper ice cream, pepper chip, roasted pepper skin powder, and jalapeño sauce. The all-red presentation is visually striking, and the lush bonanza of tastes and textures it offers is a culinary adventure.
Cookies Cream also offers a unique option for a wine and non-alcoholic drink pairing, featuring outlandish house-made drinks. The menu offers both vegetarian and vegan options, with original selections for five, six, or seven courses.
Owner Heinz "Cookie" Gindullis describes the new menu items as "paintings on plates" and "crazy amazing". With Hahn at the helm, Cookies Cream continues to push the boundaries of culinary innovation while maintaining its commitment to providing a memorable dining experience.
