Italian Sausage Simmered in Red Wine
Hear me out, mate. I stumbled upon a corker of a dish the other day, inspired by a fantasy novel by none other than Stephen Brust. When I fancied a change from the regular Italian sausage, this bad boy came to life. It ain't for a sunny day's meal, though.
Yield: 3 to 4 servingsDifficulty: Easy peasyTotal: 1 hourActive: 20 minutes
Ingredients:- Store-bought Hot Italian Sausage (whatever type tickles your fancy) - 1 lb fits the bill (6 to 8 links)- garlic - 4 cloves, chopped course- white onion - 1 medium size, cut into slices and broken apart- assorted Bell peppers (green, red, and yellow) - 1/2 cup sliced- Oregano - 1 tablespoon- red wine - 1 to 1 1/2 cups - enough to cover the sausage- Crushed Hot Pepper - as much as you fancy for heat- Olive Oil - just enough to coat the baking pan's bottom- Parmesan cheese, grated - roughly 2 to 3 tablespoons
Instructions:1. Coat the baking pan's bottom with olive oil and spread the garlic over it.2. Arrange the sausages over the garlic, followed by the onion slices. Sprinkle the cheese over the sausages.3. Mix the onions and peppers and spread them over the sausages. Sprinkle oregano on top.4. Pour in the red wine gently, just enough to reach 1/2 to 3/4 the way over the sausages. Sprinkle crushed hot pepper according to your taste.5. Pop the whole shebang into an oven preheated to 350 F and roast for 45 minutes.6. Serve with rice or spaghetti. I use the liquid as a sauce over either.
If you fancy a drink with this dish, a cold beer or a glass of red wine would cut the heat nicely. Enjoy, mate!
Oh, and for those interested, Stephen Brust is an amazing author known for his fantasy series like the Vlad Taltos books. If you want to dive into some entertaining epic fantasy, give one of his novels a read!
This dish, inspired by Stephen Brust's fantasy novel, involves adding cultural twists to traditional sausages. To yield 3 to 4 servings, follow the easy instructions that incorporate garlic, onions, bell peppers, oregano, red wine, and hot pepper, depending on your desired heat level. However, this dish is not suitable for a sunny day's meal since it requires roasting in an oven set at 350 F for 45 minutes. Serve it with rice or spaghetti, complemented by a cold beer or a glass of red wine to balance the dish's spiciness. For those intrigued by Brust's fantasy world, his Vlad Taltos books are an engaging choice for epic fantasy reading.
