No need to fuss with sugar water or added fruits. Just combine apple juice and kefir grains, and voila! A slightly fizzy, fruity beverage that's perfect for customising to your taste.

The Sparkling Apple and Cinnamon Water Kefir Recipe

Note: This recipe is designed for a 1L jar and a 750ml pressure-resistant bottle. Adjust quantities accordingly if using different-sized equipment.

Ingredients

Fermentation:- 2 tbsp. water kefir grains- 3 cups pasteurised apple juice

Flavouring:- 1/8 tsp. cinnamon powder

Equipment

  • 1 Le Parfait 1L jar
  • 1 750ml pressure-resistant bottle
  • 1 funnel with sieve

Steps

1. Fermenting Kefir

  • Pour the apple juice into the jar.
  • Add the water kefir grains.
  • Cover the jar with a clean cloth.
  • Allow to ferment at room temperature for 48 hours. The liquid should start to foam.

2. Flavouring

  • Place the funnel on the bottle and add the cinnamon powder. Then fit the sieve of the funnel.
  • Pour the kefir through the funnel to collect the grains.
  • Close the bottle and stir well.
  • Store at room temperature and test the pressure after about 3 hours. If it's not fizzy enough, reseal and test in another 3 to 6 hours.
  • Keep refrigerated to slow fermentation and enjoy!

Tips to Keep in Mind

  • Be patient – it's normal for the kefir to seem inactive for the first 24 to 36 hours. Activity typically ramps up around the 48-hour mark.
  • Keep a close eye on the pressure in the bottle. The apple juice kefir is highly active and fizzy, so it's essential to monitor the pressure to avoid accidents.
  • For purchases during apple picking season, you can use unpasteurized apple juice instead of pasteurized juice, allowing it to ferment on its own for naturally sparkling apple juice. Just be aware that unpasteurized juice may compete with the microorganisms in the kefir grains.
  • We recommend using ground cinnamon as opposed to a cinnamon stick, as a cold infusion isn't optimal for extracting the cinnamon's flavours.
  • The water kefir grains may appear darker after this recipe, but that's perfectly normal.
