Microbial transglutaminase, an enzyme not included in the list of approved food additives, has been linked to potential risks for people with food allergies, celiac disease, immune system disorders, or gastrointestinal tract diseases. It is believed to lead to the formation of specific protein compounds, thereby increasing the risk of cardiovascular, autoimmune, oncological, and neurodegenerative diseases.
